Guinness Cupcakes

A bit late on this post, but better late then never.  Right? 

We had our weekly dinner swap on St. Patrick’s Day and I was on dessert duty.  Since Sarah was making Corned Beef and Cabbage I figured I better Irish it up as well.  These Guinness Cupcakes fit the bill.  It was the first time I can actually remember making the cupcakes AND frosting from scratch.  And halfway through the cupcakes my parents called and wanted to FaceTime. 

So I took a little break and let Brady chat with my parent’s dog Toby.

When our FaceTime was over I put the cupcakes in the oven and whipped up the frosting.  The outside is a chocolate icing and the inside is made with Bailey’s.  And was amazing.
