Delicious Dip and a Birthday Gift

It’s that time of year again, the time where we celebrate me being born.  Birthdays seem a bit silly.  I mean my mom did all the work, and I show up and get all the gifts.  But I guess that’s why we have Mother’s Day!

I survived another year!  Let’s celebrate that!

My parents surprised me with this KitchenAid and hubs tipped them off that I had been eyeing the silver one.  I guess my parents decided to go big or go home because they got me the industrial KitchenAid.  It has attachments for making pasta and bread.  Not that I’ll ever tackle making home made pasta. 

The only downside of this puppy is that I live in New York City and have extremely limited counter space.  This thing takes up- oh, half of it.

I christened the new mixer by making Buffalo Chicken Dip.  This dip is seriously the most amazing thing ever and is always a huge crowd pleaser.


4 cups boiled and shredded chicken breast

12 ounce bottle of Frank’s Buffalo Wing Sauce

1 cup Ranch or Blue Cheese (I always use Ranch)

2 packages cream cheese (regular, not low fat)

1 cup shredded cheese


Mix the wing sauce, ranch (or blue cheese) and cream cheese until smooth.  Mix in the shredded chicken and put in a casserole dish (at least 8×8).  Sprinkle the cheese on top and cover with foil.  Bake at 400 for 30 minutes and then remove the foil and bake for 10 more minutes.

When the cheese on top is bubbling you’re good to go.  I generally serve with tortilla chips.

Trust me, it’s delicious.
