The Lunch Club Breakdown

I blogged a while back about how a couple of coworkers and I had started “The Lunch Club”.  There are six of us involved and we all bring in different items to contribute to the pot, spending on average $10-15 per person, per week.

Lunch club is still going strong and at less than $3/day I can not recommend this more.  We never find ourselves bored with our options because we try to bring in new things to spice up our lunches.

Here’s what the breakdown looks like:

Person 1: Sliced Turkey, Tomatoes, Whole Wheat Sandwich Thins

Person 2: Lettuce/Spinach (six people go through a TON of lettuce in one week)

Person 3: Chicken, Whole Wheat Wraps

[Persons 4, 5 and 6 get a bit more freedom to choose random things based on what we’re running low on, etc]

Person 4: Oil, Vinegar, Breakfast Bars, Snacks (veggie chips, pita and hummus, string cheese etc)

Person 5: Veggies and fresh produce (asparagus, carrots, peppers, jalapenos, onion, edamame, cucumbers, broccoli)

Person 6: Cheeses for salads (generally goat cheese and Parmesan), fruits (bananas, strawberries, blueberries, raspberries), granola and yogurts etc

And for visuals:

Arugula salad with thai noodles, cherry tomatoes, sprouts, goat cheese, cucumber and red peppers (notice those clementines in the background?  Snack!)

Turkey sandwich on whole wheat sandwich thin and a side salad with broccoli, baked asparagus, cherry tomatoes, shaved Parmesan and cucumbers

Arugula/spinach salad with barbecue chicken, tomatoes, cucumbers, Parmesan, edamame and jalapenos

Lemon Water- I find myself drinking a whole lot more water if I squeeze some lemon into it

And there you go folks- that’s lunch club!  Grab some coworkers and start eating healthier AND saving money all at the same time.
